Tilapia!




First, I dredged it in Wondra instant flour.
then, I beat an egg, dipped the fillet and rolled it in 4C Italian breadcrumbs.
Fried it 3 minutes on one side, two on the other, in Safflower oil.
Chopped fresh curly parsley over it, then squeezed half a lime and made a lime curl.

Yum!
